Recipe – Insalata Caprese

One of my favorite summer dishes is Insalata Caprese (Caprese Salad).  As I have mentioned before, I am a total fan of quick and easy meals and dishes that are incredibly yummy and in this case beautiful to look at.  

And now is the MOST appropriate time for this salad with the world cup games going on – nothing says “Italian” like this salad which contains the colors of the Italian flag and so well represents the incredibly fresh and flavorful foods produced here.

I have included a variety of  pictures because I wanted to show how creative one can get with some tomatoes, mozzarella and basil!  Buon Appetito!

Insalta Caprese

INGREDIENTS:

1 pound vine-ripened tomatoes sliced ¼ inch thick

12 – 16 ounces fresh mozzarella sliced ¼ inch thick

¼ cup fresh basil, washed and dried

oregano, salt, pepper to taste

extra virgin olive oil for drizzling to taste

 

METHOD:  

1.  Arrange tomato, mozzarella and  basil leaves by overlapping in desired design.

2.  Sprinkle with oregano. (optional)

3.  Drizzle with olive oil.

4.  Season with salt and pepper.

  1. I love caprese salad. It is a regular at our place. Sometimes for antipasti I put a small ball of mozzarella, basil and half a cherry tomato on a toothpick.
